I have decided that there are so many amazing recipes out there in blogging land, that at the end of each month I am going to do a “RECIPE OF THE MONTH”. I’m going to try new recipes from other blogs, as there are so many I want to cook and don’t get the chance to! Sometimes they won’t be from the month that the blogger has posted (as I have a back log) but they will still be other bloggers recipes!
This means I get to try new recipes from other bloggers, then you can see what other bloggers are producing as well. It gives us both a chance to see what is going on in the blogging community! If you would like to join in, pick a favourite recipe from another blog, make it, take a photo, but in the recipe link (of course) and tell us why it is your favourite recipe that month. All you have to do is then leave a comment on my “Recipe of The Month” page and we are away. This could be fun and a great way of letting our blogging friends know that we really do make and love what they post!
Some of the fabulous recipes I am going to convert to the Thermomix, because I can! 🙂 So if you have a Thermomix, look out for the method at the end of the blog!
August 2014 Recipe of the Month is:
Claire K Creations – Triple Chocolate Brownies with Pecan’s
There were so many to choose from this month, but I just had to make these and OMG I’m never going to be the same again. I have to say that these are the best Brownies I have ever eaten! That is a big call, but they are.
I love Claire’s blog, it has the most beautiful photos and she does a weekly update that is personal and a beautiful insight into her heart and her love for her family, her life and her food!
I have always struggled with make Brownies… I’m not sure why, but these came out perfectly! So my mouth thanks you Claire, but my hips do not! 🙂

Ingredients
125g of Butter
200g of Dark Chocolate
100g of Caster Sugar
2 Large Eggs
200g Plain Flour
150 g of white chocolate bits
110g of milk chocolate bits
100g of chopped pecans

Method
1. Preheat the oven to 150 degrees Celsius (fan forced) and grease and line a 20cm square cake tin.
2. Place pecans into mixing bowl and chop 1 second/lid closed/turbo and set aside.
3. Place dark chocolate and butter into mixing bowl and melt 6 minutes/50 degrees/speed 2.
4. Place all other ingredients into mixing bowl (sugar and egg first onto melted chocolate mixture then the rest) and mix 30 seconds/ backwards/speed 2.
5. Pour out of mixing bowl and spread into the prepared tin (I had to press it in and make sure there was enough mixture in the corners) and bake for 30 minutes or until cake tester in the middle comes out the moist crumbs.
6. Allow to cool completely in the tin then remove and cut into squares (I let it cool then put it in the fridge it was easier to cut).
7. Dust with icing sugar to serve (optional).
I put the whole tray in the fridge and when they were cold cut them, as it seemed to be easier. I’m a fan of cold slice and I kept them in the fridge in an airtight container and had one piece every day (ok maybe two) and they tasted very fresh for the duration.
Please leave a comment, and don’t blame me if you can’t just eat one piece, blame Claire! hehe
Enjoy Irresponsibly! Because life is too short to eat bad food…
Liz x
