Raspberry and White Chocolate Muffins (Thermomix Method Included)

Muffins… well really I feel the same way about muffins as I do about cup cakes… I’m not a fan! I would rather have something a little bit different for my “calorific buck” so if I’m going to eat something that I shouldn’t, I wouldn’t necessarily pick a muffin. At Cafe’s they are too big, too dry and really, you only want to eat the yummy soft top that has all the bits on it (tell the truth) and lets face it they are really just a cake disguised as a muffin pretending to be health when they aren’t! 🙂

I only found this recipe a couple of years ago in some little book that was 10 pages long. It was called the best muffin recipe… I tried it and was disappointed as it was not the best, but it had potential! This is where my taste buds came in! 🙂 Oh and you are going to be glad that they did! This makes 12 really good sized muffins or about 18 smaller ones. They are so easy and one bowl, you will be whipping them up every time someone comes over for a cuppa. They also freeze really well (although the top gets a bit sticky when defrosted) so make a few batches and use them for the lunches or snacks.

This picture is my recipe written in “The Book.” Recipes only get entered into the book after 3 successful goes! “The Book” is full so I need to get a new one, but I just can’t seem to find the right one as I bought this in Florence… So I may need a trip overseas! Well that’s my story and I’m sticking to it!

You can use any chocolate chips you like or don’t put them in at all. Many times I just make a fruit muffin and they are still delicious. The recipe say 200g of fruit. You can use mashed bananas (I’m allergic to them, but everyone who has made it using bananas says they are fantastic banana muffins) or use frozen fruit. The key is not to let the fruit melt, put it in frozen (not the bananas) and don’t mix the mixture too much. If you have a Thermomix it truly only needs 3 seconds… I think even 2 seconds would be enough!

This is all you need!

Ingredients

2 cups of Self Raising Flour (300g)

2 Eggs

3/4 cup of Oil (I use light Olive or melted Coconut) (130g)

3/4 cup of raw sugar (you can halve this depending on the fruit you use)(120g)

3/4 cup milk (170g)

200g mashed bananas or any frozen berries (raspberries, mixed fruit, blueberries etc.)

120g Choc Chips (White, Milk or Dark, Optional)

Method

1. Preheat oven to 180 degrees Celsius.

2. Place muffins papers in tin.

3. Put all ingredients into a large bowl and mix until just combine.

4. Divide between muffins papers evenly and cook in oven for 25 minutes.

I decorated with a few extra bits, but you don’t have to do that 🙂

5. EAT!

1. Preheat oven to 180 degrees Celsius.

2. Place muffins papers in tin.

3. Place all ingredients into mixing bowl with the fruit and chocolate going in last and mix 3 seconds/reverse/ speed 5.

4. Divide between muffins papers evenly and cook in oven for 25 minutes.

5. EAT!

I often make two batches in succession and I don’t even clean out the bowl in-between, because it is all the same stuff, so it make no difference.

If I’m really honesty, these are the only muffins I eat now and I make them all the time and take them places because they are so easy and everyone seems to enjoy them!
