Kaz’s Passionfruit slice (Thermomix Method Included)

Passionfruit Slice

I know that this might not seem like a very Christmasy recipe, BUT passionfruit are in season at the moment and this is the only time I get to eat this slice.

Kaz is a friend of mine from High School… Yes we have known each other that long and are still friends! Every Christmas Kaz has holidays around this time and we all get together at her house for a morning tea… ALL the kids hang out in the pool and we sit and chat… Well normally Kaz makes this slice, usually at my request, so this year…. I decided that I needed the recipe and I would make it because we had so many passionfruit that fell of the vine after a big storm a week ago and I had to do something with them!

We only went from 10:30am till 1:30pm today, so that is why the blog is a bit late as I didn’t have time to post it this morning as I had to get to the morning tea.

Passionfruit Slice

The interesting thing is that this year there was some Chocolate Chip Short bread that looked very familiar and also some brownies that I had seen before… so even if now one else is making the recipes that I put up, my girlfriends are 🙂

Ingredients – Base

2 Cups (340g) Self Raising Flour

1 Cup (160g) Brown Sugar

2 Cups (170g) Coconut

250g Butter

Ingredients – Top

2 Tins Condensed Milk

Pulp from approximately 4 Passionfruit (you need the real thing not the tin stuff as it doesn’t taste the same or set the same).

160 ml (g) Lemon Juice

Method

1. Preheat oven to 180 degrees and line a large slice tin (25cm x 35cm) with baking paper.

2. Melt butter in a pan and pour over combined flour, sugar and coconut.

3. Mix ingredients well and press into a prepared slice tin.

4. Bake in the oven for 12 minutes at 180Âş.

5. While base is cooking, combine condensed milk, lemon juice and passionfruit pulp.

6. Remove base from the oven, and turn down to 150 degrees celsius.

7. Pour condensed milk mixture over hot base and carefully spread out.

8. Place back into the oven for 4 minutes.

9. Allow slice to cool on the bench then place in the fridge for 3 hours to continue to set.

10. When slice is completely cold, cut and eat. Keep refrigerated, when not in use! 🙂

THERMOMIX METHOD

Thermomix

This Slice was made in the TM5 and exact quantities can be made in the TM31.

1. Melt butter in mixing bowl 2 minutes/Varoma/speed 2.

2. Place all other base ingredients into mix bowl and mix 10 seconds/speed 5, scrape down sides and repeat (you may need to use the spatula to help the mixture move around)

3. Press mixture into a prepared slice tin and bake in the oven for 12 minutes at 180º.

4. Clean mixing bowl and Insert butterfly.

5. Place all the ingredients for the top of the slice into the Thermomix, then mix 10 seconds/reverse/speed 4.

6. Remove base from the oven, and turn down to 150 degrees celsius.

7. Pour condensed milk mixture over hot base and carefully spread out.

8. Place back into the oven for 4 minutes.

9. Allow slice to cool on the bench then place in the fridge for 3 hours to continue to set.

10. When slice is completely cold, cut and eat. Keep refrigerated, when not in use! 🙂

I’m always so thankful for this time of year that even though I am still single and I may not have any children of my own, I have wonderful friends that love on me, encourage me and share their kids with me! I am very blessed!

This recipe is very easily halved if you don’t want to make a big tin of it!

So enjoy this delicious slice, that even though it is sweet, will have you coming back for more and more!

    Those enduring friendships are always the best. I’m catching up with a friend of mine that I went to school with from age 12 this Saturday night – really looking forward to it as I know we’ll just click into the groove and spend the rest of the night talking at high speed and laughing our heads off. I love the look of this slice and it has two of my most favourite ingredients – condensed milk and passionfruit! xx
