Cheese Biscuits… what can I say about Cheese Biscuits??? DON’T MAKE THEM! Before you know it they are all gone… One batch makes about 80 small biscuits and you think it is a lot, but it’s not! I make about 4 – 6 batches every Christmas and they just seem to disappear…

If you like them with a bit of bite, make sure you get fresh cayenne pepper as last year I put in a tablespoon and was very disappointed because there was no heat at all,  as it was last years Cayenne Pepper!

I have a feeling that this recipe originally came from a “Woman’s Weekly” recipe magazine, but I really can’t be sure. All I know is we make them every year and there are never any left over. So enjoy these delicious biscuits with some bubbles and a cheese platter or just watch them disappear one by one all on their own!

Cheese Biscuits

Ingredients

125g Butter (softened)

1 Cup Flour (160g)

2 Tablespoons Self Raising Flour (40g)

125g Tasty Cheese (grated)

2 Tablespoons of Good Quality Parmesan, grated (40g)

1 Teaspoon Smokey Paprika

1 Tablespoon Lemon Juice (20g)

Cayenne pepper to taste (optional)

1 teaspoon of salt (added 23/12/2104) I made a batch today and tasted the mixture and they really needed salt. I think it really depends on the type of cheese you buy, so have a little taste and see… They can always be a bit salty, that means you just might have to have another drink 🙂 Cheers!

Method

1. Sift dry ingredients into a bowl (you can add as much or as little cayenne pepper as you like).

2. Add grated Cheeses and lemon juice and mix into a soft dough.

3. Press ingredients and shape into a 2 – 4 x 3 cm wide sausages and wrap tightly in grease proof paper then wrap in aluminium foil and refrigerate for at least 3 hours. ( I make them in the afternoon and then leave them over night in the fridge)

4. Preheat the oven to 180 degree celsius, prepare banking tray with baking paper and remove rolls from the fridge.

5. Cut rolls immediately in  .5cm slices and place on a prepared baking tray.

6. Bake for 15 minutes until golden brown.

7. Cool on trays and eat with you drink of choice!

NB at step 3 you could easily put them in the freezer and get them out to cut anytime you felt like them… just a preheated oven and 15 minutes away!

THERMOMIX METHOD

This recipe was made in the TM5 and can be made exactly in the TM31

1. Place all ingredients into the mixing bowl and mix 20 seconds /speed 7. (you can pre-mill your tasty and parmesan cheeses)

2. Add more lemon juice if the ingredients are not coming together.

Just so I’m covered here… At the very beginning, I did tell you NOT to make them…! So for warned is far armed, or so they say!
