There is something about Apple Crumble that makes us all think of our grandma and comfort food. Well this slice is no different. My nanas favourite was apple and rhubarb crumble, but I have turned this around and made it into a slice, which makes it a bit easier to dish out as you can cut it and everyone get the same amount of crumble and apple. I don’t know about you, but when I was a kid it was always can I have more crumble… This way same amount of apple and crumble for everyone, as long as you spread it evenly!
You have a nice cakey base, tart, apple centre and crunchy, crumble top. Honestly what is not to like. Serve it with, cream, custard, ice-cream, or just have a nice big slice all to yourself. This can be served hot or cold and I think taste delicious either way.
This recipe is for a large slice tin 25cm by 35cm and cuts into approximately 50 pieces. This recipe halves very easily for a smaller slice.
Ingredients – Apples
1 kg of peeled, cored apples
1/2 teaspoon ground cloves
2 teaspoons cinnamon
1 (20g) Tablespoon Sugar
1 (20g) Tablespoon Water
Ingredients – Base
180g Butter (softened)
3/4 Cup (160g) Castor Sugar
2 Eggs
2/3 Cup (110g) Self Raising Flour
1 1/2 Cups (240g) Plain Flour
Ingredients – Crumble
150g Butter
100g Brown Sugar
200g Plain Flour
100g Coconut
100g Rolled Oats
Method – Apples
1. Roughly chop peeled and cored apples and place in a saucepan with all other ingredients.
2. Cook on medium heat until apples are almost cooked, then mash roughly with a potato masher or fork and set aside to cool.
Method – Base
1. Prepare a large slice tin (25cm – 35cm) with baking paper
2. Cream softened butter and sugar (from base ingredients) until light and fluffy.
3. Add eggs, one at a time until well combined.
4. Add flour and mix well into a stiff batter.
5. Spread batter evenly into the bottom of the prepared slice tin.
Method – Crumble
1. Preheat oven to 180ºC.
2. Place all crumble ingredients in a bowl (except butter) and mix until well combined.
3. Melt the 150g of butter and add to the dry mixture and mix until well combined.
4. Finish putting the slice together by spreading the cooled apple evenly over the top of the base, then spread the crumble over the top of the apple.
5. (Optional) dot the top of the crumble with little knobs of extra butter.
6. Cook in the preheated oven for 35 minutes.
7. Serve hot with custard or cream or cool in the fridge for a delicious apple slice. (It cuts better when it is cool)
THERMOMIX METHOD
Method – Apples
1. Peel, core and quarter apples and place them in the mixing bowl with all other ingredients, cook for 20 minutes/100º/speed 1.
2. When finished cooking blend for 5 seconds/speed 6. Pour out apples into a separate bowl and allow to cool.
Method – Base
1. Prepare a large slice tin (25cm – 35cm) with baking paper
2. Place sugar into a clean dry mixing bowl and mill 10 seconds/speed 9.
3. Add Butterfly and secure into place. Add softened butter and mix 30 seconds/speed 4, scrape down the bowl and then mix 3 minutes/speed 4.
3. Add eggs, into the mixing bowl and mix 30 seconds/speed 3.
4. Add flours and mix 10 seconds/speed 4, scrape down the bowl and repeat.
5. Spread batter evenly into the bottom of the prepared slice tin.
Method – Crumble
1. Preheat oven to 180ºC
2. Melt the 150g of butter 2 minutes/Varoma/speed 1.
3. Add all other crumble ingredients to the mixing bowl and blend 5 seconds/speed 5. Scrape spatula around the mixing bowl to make sure that tall the crumble is combined well.
4. Finish putting the slice together by spreading the cooled apple evenly over the top of the base, then spread the crumble over the top of the apple.
5. (Optional) dot the top of the crumble with lies knobs of extra butter.
6. Cook in the preheated oven for 35 minutes.
7. Serve hot with custard or cream or cool in the fridge for a delicious apple slice.
This is a favourite of mine, I hope you like it. I must say that it is a bit messy and you will probably need a plate to eat it off, so no just grabbing a slice out of the fridge on the sly and eating it quick!

Popping by to let you know that I made this today to take along as my contribution to a party tomorrow. It’s delicious! I veganised it by subbing out the eggs and I used a vegan butter alternative but it worked out really well. Couldn’t resist sampling a small piece while it was warm; but the rest of it’s cooling in the fridge before cutting tomorrow.
